Bettei Matoya is one of the restaurants at the Grand Mercure Ise Shima Resort & Spa in Shima. Its cooking draws on the seafood of Matoya Bay, the aquaculture techniques handed down there, and the producers behind them. It was created as a joint effort between the hotel and those producers, linking tourism to the area's primary industries.
